i must say that i'm a conditional egg eater. i can't go around eating eggs everyday. i know some people can. but i need to be in the right frame of mind. mostly i eat them later in the morning or at lunch. i am not capable of eating an egg at 7am before work, i can't say that i've ever tried to, but i know that it is a nonstarter. anywho this is an egg preparation that i fully back- the tortilla is a great vehicle for egg consuming and the little veg mix on top is kind of like a salad in miniature. i feel like your friends would be really impressed if you had them over for brunch and you made this. you might just need to make like a tostada buffet so everyone can diy the toppings, but don't let them cook the eggs b/c they might mess that up. ;)

the way to go
makes 2 (can easily be increased by cooking mas huevos)
2 corn tortillas
1/8 cup olive oil
2 eggs
salt
for topping:
cheddar (or queso fresco if you have it)
microgreens
jalapeno sliced thin
watermelon radish sliced thin and cut into 1/8th pieces
cilantro
hot sauce
in a cast iron skillet fry the tortillas in oilve oil on medium-high heat until crisp, pull from oil and drain on a paper towel lined plate and sprinkle with salt. next cook the eggs on medium heat in the same skillet, crack eggs and cook for about 2-3 minutes or until the edges are dark brown and the yolk looks runny but set, season with salt while cooking. take eggs out of the pan and set aside. to assemble tostada, plate a tortilla and top with some grated cheese, egg, microgreens, avocado, jalapeño, radish, cilantro, and hot sauce.
