broccoli's pale cousin is trending- what with cauliflower rice being sold in the freezer section of trader joe's, and bloggers on the gram loading up their smoothies with frozen spears. i mean it's no kale but i'm down. my favorite method of cooking cauliflower is roasting. it's pretty foolproof and the crispier the cauliflower gets the better.

the way to go
1 smallish head of cauliflower
3 tbsp olive oil
1/2 cup plain greek yogurt
1 tbsp tahini
1 lemon
handful of fresh chopped mint
handful of fresh chopped dill
preheat oven to 400 degrees. trim excess leaves of cauliflower, slice head of cauliflower in 1/2 inch thick pieces. toss cauliflower with olive oil right on the sheet tray until fully coated. spread cauliflower out over the tray and roast for about 10 minutes, then toss and check on browning. roast for another 10-15 minutes or until cauliflower is golden brown. remove cauliflower from oven and squeeze 1/2 lemon over the cooked cauliflower. whisk yogurt, tahini, and lemon juice until smooth. spoon yogurt onto a platter and then arrange cauliflower on top and sprinkle with fresh chopped mint and dill.
