important update- i no longer live in freezer, i've upgraded to a refrigerator (aka vermont's spring climate). but hey there are signs of hope if you look hard, day lily buds are popping, my seedlings indoors are germinating and poking their little sprouts up. we've even had a stretch of sunny days which i'm feeling very appreciative of. spring is inevitably en route, so yay!

check out the burton girls challenge we did a few weeks back, basically we rode before work and after work and worked in between- it was fun and a little exhausting ;)
the way to go
1/2 cup quinoa cooked according to package directions and allowed to cool to room temp
1/2 cup chopped parsley
1/4 cup chopped mint
4 chopped scallions
1 cup of chopped cherry tomatoes
1/2 cup chopped english cucumber
juice of 1 lemon
salt to taste
1/2 cup crumbled smoked feta (or regular if you can't find smoked)
in a large bowl combine quinoa, parsley, mint, scallions, tomatoes, cucumber and season with salt and lemon, toss to combine, add more salt if needed. top with crumbled smoked feta andtoss again.
